I have several thousand people on my bot and it was spitting out tickets to everyone and my economy is now royally screwed. I don't see a remove X all command on deepbot - Why is this not a function? What can I do to fix this? In my economy 5k tickets is a lot, and everyone now has 40k+

Don't quite understand what happened here. What caused it to issue so many tickets? Can you provide more details?
I have not seen any such issue reported before.
You have two options here. In the backups\0\ folder there should be time stamped copies of the users.bin file. You can choose to restore a copy before the issue began.
Alternatively, if you want to remove tickets, then in the chat tab, you can hit the "?" golden icon and input a negative number to remove points from all online users.

How do I actually go about doing the restore? I know which timestamp I want to restore to, but I am really not that tech savvy.. Could you tell me step by step? Would be greatly appreciated.

To restore a backup:
- Close DeepBot
- rename users.bin to users_bak.bin (This is the backup of your current database)
- Find the file you want to restore from the backups\0\ folder and copy it
- Paste the file in the main folder (where the original users.bin was)
- Rename the backup file to users.bin
- Start DeepBot
